Located in the historic grounds of Bishton Hall, Mercia Distillery invites you to discover our unique Gin Lab experience – where you can create your own signature gin under the guidance of expert distillers.

Part of the ambitious Mercia Whisky brand, we draw on Anglo-Saxon heritage and a bold, pioneering spirit. Founded in 2020 by Jeremy ‘Jez’ Roney and Paul ‘Oz’ Horrocks, Mercia Whisky aims to produce the UK’s finest rye whisky. Our first releases in 2021 included a small-batch four-month rye and the innovative White Dog Spirit custom-age project.
Whether you’re crafting gin or exploring our whisky journey, Mercia Distillery offers a spirited blend of tradition, innovation and flavour.
